Did the quarantine foil your plans for a Cancun getaway? Are you missing out on sipping cocktails on the beach in paradise? Here’s some recipes you can recreate at home for a taste of the tropics! No Mexican vacation is complete without a MARGARITA! What You Need: • 1 Shot Tequila • ½ Shot Triple Sec • 4-6 Fresh Limes • 2 Cups of Ice • Salt or Sugar for Rimming Step 1: Juice limes over ice, you’ll need about a cup worth. Want to skip this step? You can get the pre-juiced lime juice from the store! Step 2: Add in the tequila and triple sec. Step 3: Blend it up! Blend until slushy, you’ll want it just enough that the big chunks are broken up but before it is completely liquefied. Step 4: Rim the glass with a slice of lime and dip the rim of the glass in the salt or sugar, pour in your margarita and enjoy! Bonus: Prefer a flavored margarita? Add in some frozen fruit before blending for a fruity addition! Nothing screams tropical more than a PINA COLADA What You Need: • 1 ½ ounces White Rum • ½ cup diced frozen pineapple • 2 ounces pineapple juice • 2 ounces coconut cream • Optional pineapple, cherry & umbrella for garnish Step 1: Pour the ice, frozen pineapple, juice, coconut cream and run into a blender Step 2: Blend until smooth and frosty. Make sure to blend enough so the ice is crushed but not too much that the mixture becomes too liquidy! Step 3: Pour into a glass and garnish the rim with pineapple slices and cherry. Want to kick it up a notch? Add a splash of rum on top of your drink and enjoy a floater! Want to enjoy a Mexican staple drink? A MICHELADA is similar to a Bloody Mary and is super popular in Mexico! What You Need: • Mexican Beer (Modelo is typical but any will work) • Clamato or Tomato Juice • 3-4 splashes hot sauce, more or less to taste • 2 splashes of Worcestershire sauce • 2 splashes of Maggi sauce (or soy sauce) • Juice of 1 lime • Tajin seasoning (or salt) for the rim Step 1: Take about a tablespoon of Tajin (or salt) and sprinkle it on a small plate. Rub a slice of lime around the rim of the glass and then press the rim in the Tajin to salt the rim Step 2: Fill the glass about ¼ to 1/3 with the Clamato (or tomato) juice. Add the hot sauce, then the lime juice, the Worcestershire sauce, soy sauce and the extra Tajin used to salt the rim. Step 3: Fill the rest of the glass with cold beer Step 4: Garnish with a slice of lime and Cheers! Another classic Mexican cocktail is the PALOMA. If you’re looking for something light and refreshing, this is the drink for you! What You Need: • 2 oz Tequila • 1 tbsp lime juice • 4 oz Grapefruit juice • 2 oz sparkling water or club soda • 1 tsp sugar (optional) Step 1: If you want to have a little sugar on the rim of your glass, rub the edge of the glass with either a slice of lime or grapefruit and dip the top of the glass in the sugar. Step 2: Put a few ice cubes in a glass, add the tequila, the lime and grapefruit juice and top with the sparkling water/ club soda. Note: You can also make this drink using grapefruit soda instead of the grapefruit juice and soda water.
